Job Summary
We are seeking a Masa/Tortilla Production Cook to join the team at Escuela! In this position, you will be responsible for using high-quality dry corn to nixtamalize and grind in house for delicious and fragrant masa. The ideal candidate is experienced, attentive, and has extensive knowledge of making masa. If you have a passion for nixtamalization and masa production, we want to hear from you!
Duties and Responsibilities:
- Nixtamalizing Corn
- Grinding corn using/properly cleaning a molanito
- Experience with masa roller/corn tortilla machine2
- Flour Tortilla production
- Set up the kitchen with necessary tools and equipment
- Maintain appropriate levels of inventory
- Participate in daily kitchen opening/clean up
- Performs other duties as assigned by our chef team
Qualifications:
- Previous experience in Masa Production is preferred
- Ability to use professional-grade kitchen appliances and equipment
- Advanced knowledge of cooking techniques and recipes
- Strong organizational and time-management skills
- Knowledge of food safety practices
- Available for early morning shifts
- Open to feedback and the ability to utilize it as a tool
- Ability to meet the physical demands of the position, including standing for long periods and lifting up to 40 pounds
- Texas Food Handlers Certification
Compensation: $18.00 - $22.00 per hour
